Wash and peel the beetroot.
Cut it into quarters.
Place it in a saucepan.
Add enough water to just cover the beetroot.
Bring to a boil, then reduce heat and simmer for 15–20 min, or until the beetroot is tender.
Fill a large pot with water and place it on the stove.
Salt the water.
Once the water starts boiling, add 600g of your preferred pasta.
Cook according to the package instructions until al dente.
Add the cooked beetroot, 200 g ricotta, 1 tsp salt, 1/2 tsp black pepper, 3 garlic cloves, 50 grams pistachio, 10 g pine nuts, 5 walnuts, 3 grams nutmeg, 50 g parmesan, 35 ml olive oil, handful of fresh basil leaves, and 2 tbsp lemon juice to a blender.
Blend until smooth and creamy.
If the sauce is too thick, add some of the boiling pasta water to thin it out.
Drain the cooked pasta, reserving a little pasta water.
Place pasta back into the pot.
Stir in the creamy beet sauce, adding a bit of the reserved pasta water if needed to achieve desired consistency.
Plate immediately and garnish with extra Parmesan cheese, if desired.
